Defense shield when str & def are over 700

We know that the amount of icons that some shields block (ex Illusens Leaf Shield) depends on your defence and on the opponent's strength.

And we know that the highest str and defence boost is at 700.

My question is : Once you have defence 700 , does it make a difference if your opponent has 700 or 5000 of strength ?

I don't think it does. The amount of damage you defend depends on your defence boost and your opponent's strength boost, and since the highest strength boost is 700, any more strength points after that do not have any effect whatsoever.

This is how I understand it, I may be wrong though...

That's how I understand it as well. So I would always block the standard amount of icons . Ex for the Leaf shield 5 earth 5 water & 3 physical.

I'll reached before X'mas str 700 (I hope), so I'm thinking about my defence now.

You will always block and amount of damage, hit points, equal to your defense boost multiplier times the standard icon defence for the weapon you are using. The amount of damage you defend is constant.
Depending on your opponents pets stats, it may show more or less icons blocked but the amount of hp blocked is constant.
