In 1 player, is there any way to keep the stolen item after the battle?

No. I think the item is always returned to its original owner.

Darn. Some of the opponents have really useful items to steal, such as the H4000 :evil:

But if you can't keep the weapon, what's the use of a stealing item?

You can use it during the battle. And your opponent can't :)
